It is a sweets bakery that is more than just a place for dessert. Over time, it has blossomed into a space filled with creativity and delicious comfort.
Recently, Jones & Swanson sat down with the owner, Canita Allen, to discover the passion and purpose that rose with every batch- a journey well beyond a simple love for baking!
Q1: TELL US ABOUT YOURSELF!
Canita Allen is an entrepreneur with a restaurant/food service background. Canita enjoyed running concessions for swim teams for many years and cooked for youth groups when her kids were growing up. She started her business when she noticed that a lot of her friends started asking her to bake more. Their love for her baked goods provoked the idea of starting I Canita Cake!
Q2: WHAT ARE CANITAS FAVORITE GOODIES FROM I CANITA CAKE?
Canita ‘s favorite featured good are the Pie Bars – they make a seasonal fruit pie bars in both regular and Vegan/GF versions. She also loves the Better than Oreo cookie sandwich, and their chocolate chip cookies with sea salt.
Q3: WHAT WAS YOUR INSPIRATION FOR I CANITA CAKE?
Canita’s inspiration for I Canita Cake started right in her home! Many of her friends would ask for many decorated desserts. The business grew to more than just her home kitchen (and family) could handle! This sparked the idea of moving to a brick and mortar. Canita is continually motivated to make her customers, friends, and family happy. She wants her baked goodies to bring people comfort and make them feel like them are home. (See their menu below!)

Q4: HOW DOES YOUR BUSINESS DIFFERENTIATE FROM IT’S COMPETITORS?
“We do a lot of custom orders – between 20 to 40 each week ranging from custom cakes and cookies. Custom cookies that look good AND taste good can be hard to find! Ours does both. We have a unique bakery and we love to make personal connections with our customers!”
Q4: WHAT DOES THE FUTURE OF I CANITA CAKE?
I Canita imagine it being any sweeter! The future looks just as sweet as their baked goodies and customer service. Canita sees her business gradually growing and she wants to continue to make her customers smile. When the craving hits, just say I Canita Cake and stop by sometime!
